This grape adds acidity to Macabeu blends and is good to improve bubbles to sparkling
Etymology means ‘slope and rocky’ that is why this grape is planted at high altitude in hilly, Rocky Mountains
Pressed and fermented without skins – more classically made in stainless steel to promote minerality
Aromas of phosphorous, fennel and green apple. On the palate, citrus, minerality and a vibrant, lively finish. Drink chilled with fresh oysters.
No fining or filtration. Spontaneous wild fermentation. Contains no added sulphites.
